This is a super simple recipe that can be used for loads of different things. You can store it in the fridge for 2-4 weeks and it will freeze for up to three months. I made mine by hand but if you want it really smooth, or if you are making a large batch, then it is best to use a blender.
What Can You Use Date Paste For?
- You can use date paste as a sweetner in baking. If you are using it in place of a syrup you will need to thin it with water and use about 50% more quantity than the syrup. If you are using it instead of a granulated sugar you can use the same amount but the paste will add extra moisture so bear that in mind.
- I like to mix it in plain yoghurt for the kids- they love it and it's far better than buying flavoured yoghurts from the shops.
- Spread on toast, potato cakes, pancakes etc
- Stir in to porridge, rice pudding etc
- Use it to sweeten and bind oat balls
Ingredients
- 150g dried dates (obviously use as much as you like)
- Boiling water to cover
Method
- Place the dates in a bowl and cover with boiling water - be careful not to buy dried dates with added sugar.
- Soak until soft- I leave them for about 30 minutes.
- Drain the dates but retain the liquid.
- Remove stones- you can at this point remove the outer skin if you have either the time or inclination- I don't bother.
- If you are using a blender transfer to blender. Blend until smooth- add the retained water a tbsp at a time until you have the desired consistency- I find 2tbsps should be more than enough
- If you are making the paste by hand you can use a pestal and mortar or - as I used- the slightly less glamorous potato masher and fork combo
- Mash the dates down with the masher then use a fork to get it smoother- add the retained water gradually if needed. I like my paste quite thick so didn't add any water- the dates retained a bit from soaking.
- Store in an airtight container and keep in the fridge.
