I used Goat's milk, cheese and butter but you can sub in equal quantities for any milk you like -dairy or non-dairy and any hard cheese you like.
Recipe for Cheesy Broccoli Pasta
- 25g of butter
- 25g of wholemeal flour
- 290ml of milk
- 80g of hard goat's cheese
- 120g of wholemeal pasta- I used fusili
- 4 florets of broccoli
- Mixed herbs
- Bring some water to boil in a sauce pan
- Once the water is boiling add the pasta- return to the boil and then simmer for 12 minutes
- On top of the pasta pan add a steaming pan and steam the broccoli- you can also use a steamer of steam it in the microwave
- While the pasta and broccoli are cooking you can make your sauce
- Have the cheese already grated before you start
- Add your butter to a pan and melt
- Stir in the flour gradually stirring all the time to avoid lumps
- Once the butter and flour are all mixed together add the milk gradually again stirring constantly to avoid lumps
- Once all the milk has been used pour bring to the boil
- Once the sauce is boiling reduce the heat and simmer for 2 minutes
- Take the sauce of the heat and stir in the grated cheese and mixed herbs
- Drain off the pasta and broccoli and stir in to the cheese sauce
This makes 4 toddler portions or two portions for older children. You can freeze either the whole dish or any left over sauce and it will keep for about 4 weeks.
