Mild Chicken and Apricot Curry Recipe
- All the brown meat from one cooked chicken
- 150g of potatoes
- 100g butternut squash
- 50g carrot
- 1/2 small onion
- 40g dried apricots
- 2 heaped tbsp of whole yogurt
- 400ml of chicken stock
- 1/2 tsp of turmeric
- 1/2 tsp of ground cinnamon
- 1/2 tsp of ground coriander
- 1/2 tsp of ground cumin
- 2 tbsp of olive oil
- 20g of butter
* You can use cream instead of yogurt, if you want to keep it dairy free use oil in place of the butter and tinned coconut milk in place of the yogurt
Method:
Because of the potatoes this is quite a robust meal on its own but you could serve it with some rice, couscous or chapatis if you wanted. |
