Quinoa Veggie Slice Recipe
- 1 cup of uncooked quinoa
- 1 small onion
- 50g cheese
- 2 large eggs
- Any left over veggies - I used red pepper, 2 mushrooms and a handful of spinach
- 2 tsp paprika
- 1 tsp of mustard
- 1 tsp boullion (optional)
- 1 tsp mustard (optional)
- Splash of lemon juice
- Grind of black pepper
- Cook quinoa- rinse the uncooked quinoa and add to a pan- use 1 1/2 parts water to 1 part quinoa. Bring to the boil then cover and simmer on a medium to low heat for 15-20 minutes until all the water has been absorbed
- Meanwhile chop the veggies into small diced pieces and saute in a pan with the spices. Leave the spinach until write at the end as this will cook down really fast
- Remove the veggies from the heat and place in a bowl with the egg, cheese and mustard. Once the quinoa is cooked add that and stir all the ingredients together
- Grease a large oven proof dish and add the mixture. Note I used quite a deep dish which gave a thick slice- in hindsight a more shallow dish might be better.
- Cook for approximately 45 minutes on 200 C.
- Leave to cool before turning out of the dish and slicing.
