Almond Butter Oatballs Recipe
- 2 heaped tsps of almond butter - you could use any nut butter
- 1 cup of rolled oats
- 1/4 cup of raisins
- 1/2 cup of dried dates
Method:
- Soak the dates in boiling water for about 10 minutes
- Transfer the dates with a tbsp of their soaking water into a food processor and blend
- Add the oats, raisins and almond butter
- Blend until the mixture starts to come together almost like a dough does
- If you find this is not happening add small amounts of the date water until it does- add it bit by bit to avoid making your mixture too soggy
- Use a tsp to scoop up the mixture and then roll into balls with your palms
This recipe yields 20 oat balls
