You could easily make these using normal flour if you don't need them to be gluten free- just don't bother adding the oil. I also made these dairy free by using coconut milk but normal milk will work as well.

Gluten Free Blackberry Pancakes Method
- In a saucepan make coulis with fruit honey and coconut oil and cinnamon
- Simply add it all in the pan, heat it up and then simmer it down until the blackberries have softened
- In a bowl or jug mix together the flour, tbsp oil, coconut milk and egg.
- Pour in the blackberry coulis and mix together
- Heat a frying pan then reduce the heat to medium
- Pour in a little oil and ensure the whole pan is covered in a thin layer of the oil
- Pour in one sixth of the pancake mix and cook on one side until the surface becomes bubbly
- Flip and cook the other side
- Serve with fresh fruit
