Here is my recipe for Sweet Quinoa Pancakes.
Ingredients:
- 1 1/2 cups of cooked quinoa
- 3/4 cup of rice flour
- 1/4 cup coconut milk
- 2 eggs
- 1 tbsp olive oil
- 1/4 cup raisins
- Sprinkle of cinammon
- 1tbsp of honey/ maple syrup (optional)

These pancakes are my latest discovery. They are thicker and more substantial than normal pancakes and remind me a little bit of crumpets- a little bit. I made them for the first time when I had made too much quinoa for another recipe. You can make them sweet or savory by adding different ingredients and both taste great. They are gluten and dairy free as well.- That being said you could make them using normal flour and cow's milk if you have no need or desire to avoid such things.
